Cauliflower with Puree of Peas

Cauliflower with Puree of Peas

2 l0-ounce packages frozen tiny peas
2 small carrots, halved lengthwise
2 green onions
1 tablespoon sugar
1/2 teaspoon dried thyme, crumbled
Salt and freshly ground pepper to taste
6 to 7 tablespoons butter
1/2 cup light cream
1 large cauliflower

Cook peas with carrots, onions, and seasonings in small amount of water for 2 minutes or until tender.
Discard carrots and onions.
Puree peas, pan juices, butter, and cream.
Adjust seasonings and keep warm on top of double boiler.
Steam whole cauliflower until just tender.
Carefully place on heated serving dish.
Pour puree of peas over.
Garnish with sauteed cherry tomatoes.
