Broccoli
Broccoli Puree
1 large bunch broccoli
1/4 tsp. nutmeg
3 tablespoons butter
4 tablespoons melted butter
3 tablespoons flour
4 tablespoons sour cream salt, ground pepper
Trim broccoli and cook until just tender. Drain and set aside.
In heavy saucepan make a roux by melting 3 tablespoons butter, when foaming begins to subside, stir in 3 tablespoons flour. Cook a few minutes to lightly brown flour. Remove from heat.
In food processor puree the cooked broccoli and stir into the roux.
Add salt, pepper, nutmeg, melted butter and sour cream. Mix well
